What Makes Amritsari Kulcha So Special

Long before it became a street food favorite across North America, Amritsari kulcha was born in the bustling lanes of Amritsar, Punjab. It's a dish built on a simple idea done exceptionally well: a soft, hand-shaped bread stuffed with a spiced potato filling and baked in a scorching-hot clay tandoor until the outside turns golden and blistered. At Sifat Indian Cuisine in Windsor, we make ours the same traditional way, because there's no shortcut that gets you the same result.

A Bread Worth Waiting For

What separates a good kulcha from a great one comes down to three things: the dough, the filling, and the heat. Our dough is rested and hand-worked so it stays soft even after tandoor baking. The filling is a mix of mashed potato, green chili, coriander, and a blend of spices that gives every bite a little kick without overpowering the bread itself. Once it hits the tandoor, the kulcha only needs a few minutes over intense heat to puff up and develop that signature smoky, blistered crust - the part regulars say they can't get anywhere else in Windsor.

How We Serve It

Kulcha is rarely eaten on its own, and at Sifat we serve it the way it's meant to be enjoyed: alongside a bowl of spiced chole (chickpea curry), a side of tangy pickle, sliced onions, and a generous pat of butter melting right into the bread. Together, the soft heat of the chole and the smoky crunch of the kulcha crust create a balance that's hard to replicate at home.

It's a dish that works just as well for a quick lunch as it does for a full sit-down meal, which is part of why it remains one of the most-ordered items on our Amritsari Special menu.
